Guatemala - Aurelio Villatoro / Geisha
Aurelio and Araceli Villatoro are exceptional coffee producers from Hoja Blanca, a high-altitude valley in Huehuetenango, Guatemala. Their multigenerational family enterprise has earned international acclaim, consistently winning awards since the early 2000s.
Each harvest season, their process reflects unwavering attention to detail. Only perfectly ripe cherries are hand-picked, avoiding green, dry, or damaged fruit. Harvested cherries are shaded to preserve quality and pulped within six hours for peak freshness. Fermentation occurs in concrete tanks, with consistent agitation and drainage ensuring uniformity. Depending on weather, fermentation lasts 24 to 36 hours before the coffee is washed, sorted for quality, and prepared for drying. Drying is done on cement patios for six to eight days, with meticulous monitoring to maintain the integrity of each class.
From their farm, we select their Geisha variety, renowned for its bright florals on the nose. In the cup, it offers delicate notes of hibiscus, rose, and papaya, culminating in an elegant, drying finish.
